How hospitality and catering provision operates:

  • Different types of service
  • Operational requirements for front of house and kitchen
  • Suppliers and costs
  • Menu planning and adapting to customer needs

Health and safety requirements:

  • Food safety hazards and risks
  • Control measures to ensure food safety
  • Food safety regulations
  • Personal hygiene and cleaning procedures

Food can cause ill health:

  • Common types of food poisoning
  • Symptoms of food-induced ill health
  • Food-related causes of ill health
  • Identifying and handling high-risk dishes and ingredients
