What Will My Assessment Test My Knowledge On?
Students will complete a written assessment paper, and a practical assessment preparing a planned dish following a given brief. The written paper and practical assessment will cover knowledge in the following areas.
- Hospitality and Catering: knowledge of different types of hospitality and catering settings (e.g., restaurants, hotels, catering events), customer service expectations, and basic business principles.
- Food Safety: Understanding food safety regulations, hygiene practices, common foodborne illnesses, and how to prevent them, including proper food handling and storage techniques.
- Nutrition: Knowledge of nutritional requirements, the importance of balanced diets, and how to choose and prepare healthy dishes.
Menu Planning: Understanding how to create menus that meet specific customer needs, considering dietary restrictions, seasonal ingredients, and cost-effectiveness.
